Meats & Fish
1/2 cup Hazelnuts, ground
3 Tbs Butter
1.5 lbs Salmon, preferably Norwegian or steelhead trout
From Pike Place Market, Seattle, 1995.
Pre-heat oven at 400° F.
Grind the hazelnuts in a coffee grinder after cleaning out any residual coffee grounds.
Mix hazelnuts with soft butter to form a medium-consistency paste.
Wipe the salmon dry with a paper towel. Salt and pepper top surface of salmon thoroughly with slightly more on thicker part of salmon. Spread hazelnut butter evenly over surface.
Bake for 20 minutes at 400° F for salmon averaging 1 inch thick, slightly less for thinner salmon. Test thickest part of salmon at 15 minutes by sticking in a fork and withdrawing a tiny bite.
Alternatively, if you have a smoker, smoke for 90 minutes at low setting (190°F-225°F).
